I cooked lamb in the oven and air fryer - one way made it very tender

The oven method was long, but the lamb was tender and flavorful.

For the air fryer method, I followed a recipe.
I cooked the lamb in the air fryer for 15 minutes, then reduced the heat.
The lamb got crispy quickly, so I lowered the heat.
The lamb was not cooked properly, so I finished it in the oven.
The lamb was tough and not enjoyable.
