A Delicious Easter Treat: 7-Ingredient Mini Egg Cheesecake Recipe

Next, press the biscuit mixture into a 7-inch loose-bottomed tin and refrigerate it while you prepare the filling.

It's essential to note that the cheesecake will take around four hours to set in the fridge.

To make the filling, start by whipping the double cream until it forms soft peaks, then add the sifted icing sugar, cream cheese, lemon juice, and crushed Mini Eggs, blending until everything is well combined.

Once the filling is ready, spoon it into the tin over the biscuit base, leveling the top with a spoon, and refrigerate for at least four hours.

After the cheesecake has set, remove it from the tin and decorate it as you like, whether that's with a sprinkle of Mini Eggs, whipped cream, or chocolate shavings.
