Vietnam's Local Food and Culture Help Its Michelin Journey

Hieu Luc, a small fish soup restaurant in Hanoi, has been included in the Michelin Selected category for the second year. It is known for its sweet broth made from freshwater fish and greens.

The owner, Nguyen Thi Tuyen, says that being in the Michelin Guide has brought more visitors to the restaurant. Many of these visitors found the restaurant through the guide and became regular customers.

Tuyen is happy that her restaurant's traditional soup is still popular. Many other local restaurants are also being honored by the Michelin Guide, including Pho Ha Hang Hom and Thanh Van in Hanoi.

After four years, the Michelin Guide is starting to appreciate Vietnam's local food and culture. It values the country's culinary heritage and authenticity as much as cooking techniques and dining experiences.

According to Gwendal Poullennec, a Michelin director, a new generation of Vietnamese chefs is emerging. These chefs were trained abroad but have returned home to create innovative dishes using local ingredients and childhood memories.

These chefs are creating a new culinary movement in Vietnam. Their dishes are rooted in local produce and driven by a strong sense of cultural identity.

This trend is seen in Upstairs, a restaurant that was newly awarded one Michelin Star this year.

Chef Truong Hiep uses Vietnamese ingredients like fish sauce and fresh herbs in his contemporary dishes.

Hiep's priority is to use Vietnam's unique ingredients and flavors to celebrate Vietnamese cuisine and introduce it to diners.

Tales by Chapter retained its Michelin Green Star for its plant-based concept and 'zero waste' philosophy. The restaurant creates menus using familiar Vietnamese fruits and vegetables.

The chefs recognized by Michelin draw inspiration from Vietnamese cuisine's foundations, such as fish sauce and local farm produce. They craft new culinary stories for international diners, helping Vietnamese identity gain a stronger presence.

Michelin Guide Vietnam 2026 features a total of 193 selected establishments across Hanoi, Ho Chi Minh City, and Da Nang.

The list includes 11 one-star Michelin restaurants, 72 Bib Gourmand venues, 110 Michelin Selected establishments, and three Michelin Green Star recipients.

Two restaurants, ONVIT in Hanoi and Upstairs in Ho Chi Minh City, joined the one-star category this year. Michelin Guide also presented several individual awards.
