She uses a special oil called cold-press rapeseed oil, but olive oil can be used too.
For extra flavor, she suggests adding anchovy fillets or a hard-boiled egg.
Nigella also recommends frying bacon and using the fat in the dressing.
She says steaming potatoes makes them taste and feel better. She always steams her potatoes, even if they're eaten hot with butter.
Nigella's recipe uses mustard, not mayonnaise.
Start by steaming the potatoes for 25-40 minutes until they're tender. Then, dry them out for a few minutes.
While the potatoes steam, make the dressing with oil, vinegar, and mustard.
Cut the potatoes in half and add pepper. Then, pour the dressing over them and let them rest.
Add some pickles and herbs to the potatoes, and taste to see if they need more seasoning.
