Van’s fish noodle shop on Quan Thanh Street opened in 2009 and was highlighted by CNN as one of Hanoi’s must‑try dishes. Its broth simmers for three to four hours with fish bones, fermented rice‑wine residue and a pinch of peanut worms, while the tilapia is also treated with the fermented rice‑wine residue to tame any fishy smell.
Luyen’s fish‑head noodle shop on Hong Phuc Street has been serving customers since 2001. The shop fries the fish heads until they are golden and crisp, then adds them to a broth made from fish and pork bones. A special mix of apple juice, pineapple, tomatoes and fried shallots gives the broth a light sweet‑and‑sour note.
Tuyet Bun Cha on Hang Than Street has earned a place on Michelin’s Bib Gourmand list for four straight years. The restaurant’s signature bun cha features grilled pork wrapped in a Blumea lanceolaria leaf, which helps keep the meat juicy while adding a subtle herbal aroma.
The “Princess” beef noodle soup on Kim Ma Thuong Street became famous after Swedish Princess Victoria visited in 2019, giving the shop its nickname. The dish combines stir‑fried beef, noodles, fresh herbs and a fish‑sauce dip scented with fried shallots.
Thiep’s crab noodle soup on Hong Phuc Street offers a clear broth made from freshwater crab, vinegar and tomatoes, creating a light sour taste followed by natural sweetness. The snails are soaked in salted water before cooking to remove impurities and reduce any fishy odor.
These five shops illustrate how Hanoi’s noodle culture thrives on creativity: unusual ingredients, careful preparation methods and recognition from media or culinary guides turn everyday meals into celebrated culinary experiences.
