Banh it ram is a popular Vietnamese snack that mixes a crunchy fried rice cake with a soft, chewy dumpling filled with shrimp and pork. Its striking texture and recent viral fame make it worth learning how it is prepared.

Makers start by choosing fragrant glutinous rice with firm grains. Traditionally the rice is soaked, ground in a stone mill and filtered several times to create a very fine flour that gives the dumpling a smooth, chewy texture.

The ram base begins with a well‑kneaded glutinous‑rice dough that is rolled into small balls, flattened, and then deep‑fried in hot oil. The cooks keep the oil at an even temperature so the cakes turn golden and stay crisp without becoming hard.
