Because a traditional barbecue grill was unavailable, she substituted bún chả with bún thịt nướng, yet the crucial beef cut known as thăn proved elusive; unfamiliar grocery stores and a language barrier made the search for the correct cut a protracted ordeal.
A chance encounter with a Vietnamese butcher—who, after six decades in Montreal, had lost much of his mother tongue—still did not resolve the issue, as he could not identify the requested cut and offered a different one, forcing the author to improvise.
Undeterred, the author’s friends rolled nem, grilled the improvised meat, and sang loudly into the night, turning the makeshift gathering into a memorable, unmistakably Vietnamese birthday despite the compromises.
The experience underscores how diaspora communities must constantly negotiate between fidelity to tradition and the constraints of a new environment, revealing that cultural identity is sustained as much by adaptability and collective effort as by the precise ingredients of the original ritual.
