Why Adding Eggs Too Early Makes Braised Eggs Tough

Chef Vu Nhat Thong of the Eric Vu Cooking Class Center explains that egg‑white proteins are tightly coiled, and when the eggs are dropped into the boiling braise too early, the heat stretches those protein strands.

At the same time, the concentrated salt and fish sauce in the broth bind the stretched proteins into a firm network. This network makes the whites tough and stops the seasoning from reaching the yolks.

Thong says seasoning moves from the concentrated braising liquid into the eggs most easily before the whites become too firm.

If the eggs are added only after the pork begins to soften and the liquid has reduced by about a third, the heat is lower and the salt concentration is less. This keeps the whites soft and porous.

He also recommends soaking boiled, peeled eggs in the cooled braising liquid for 15‑20 minutes before returning them to the pot. The gradual exposure lets the whites stay tender while the flavor penetrates.
